Cookies or biscuits? What do you call them? I usually call baked sweets like these cookies, and call crackers and the like biscuits. But then there’s also some stuff I’ve read where they referred to scones as biscuits. Hmm… I’m usually not concerned about these labels, I’ll eat them whatever they’re called, but I wonder if it’s bothered anyone.
It reminds me of when I came to NZ and flip flops became jandals, takeouts were takeaways, putting u’s in colour, neighbour, odour… z’s became s’s in realisation, recognise… Oh english. You tried to make it complicated but it didn’t bother me mwahahahah.
The book where I got this recipe from was very New Zealand. It was a collection of old recipes by New Zealanders so I thought that was pretty cool. It had the adorable grandma’s grandma backstories and the photos of kiwi grandmama’s beautiful handwritten recipes. Grandparents’ handwriting are always so beautiful. I remember that everytime I see my grandpa’s signature I feel so inadequate with my own penmanship. Hahah.
Anyways this cookie recipe was named so because it uses a tiny bit of condensed milk and the most popular brand at the time was Highlander. Not a spectacular back story but at least it had a nice name because of it. You never know but someday our descendants might have iPhone noodles, named so because once upon a time someone decided to eat only noodles to pay for an iPhone. It’s possible.
So these biscuits. I’ll call them that because I might as well follow the actual name given.
It’s not like my usual chocolate chip cookie. It’s actually near to a shortbread. Nice to crumble, not the soft cookie types. It’s small but then it’s a nice excuse to eat more. A nice little thing with some english breakfast tea, I think.
Excuse the photos. It’s been a while since I’ve been baking and it was nice to be taking photos of cookies -er, biscuits again.

Highlander Biscuits from Ladies, A Plate: Traditional Home Baking by Alexa Johnston
115g butter, softened
2 tbsp condensed milk
1/2 tsp vanilla
1 tsp baking powder
55g chocolate chips
– Preheat the oven to 180 degrees Celsius and line a baking sheet with baking paper.
– In a bowl, sift together flour and baking powder. Set aside.
– In a different bowl, cream butter and sugar together. Then add condensed milk and vanilla. Mix until smooth.
– Then add the dry ingredients with the rest of the ingredients while mixing on low speed.
– Turn the crumbly mass onto a kitchen surface and knead into a ball.
– Add the chocolate chips and knead it a bit to distribute the chocolate all over the dough.
– Take a teaspoonfuls of the dough then roll to into a small ball (makes around 30 small balls) then place on the baking sheet. Flatten with a fork.
– Bake in the oven for 12 – 15 mins.
– Cool in a wire rack.
